I love having things that I can eat for a few days that are versatile — meaning, I can eat it multiple ways. Chili is just that!
Have it with eggs in the morning, as a stand alone or a snack, over a sweet potato or regular potato, over roasted butternut squash, with a side salad, or a delicious piece of organic sourdough rye. The options are plentiful — and we haven’t even discussed the toppings! … You can even add more veggies to your chili like celery, carrots, or bell peppers, simply chop them up and add them in!
Let’s talk toppings:
chopped onions of any type (green, red, white)
organic dairy products like cottage cheese, feta cheese, plain yogurt made with cow, goat, or sheep milk
